Last week, after being blessed with many cucumbers from the Pollocks, we set aside a day to make pickles!!

Time to put them in!
While we had the mess, we decided to make jam out of last year's strawberries.
We made it with no suger, using honey as a sweetener. It turned out really good!!
This is what happens when you are in a hot kitchen all day. . .
And... the picture of the day
We walked in the kitchen and saw this. We all cracked up. Apparently Rosie got bored and decided the pot-holder did not look quite right in the drawer. :)

Looks like alot of "fun", "hard", work and alot of fruits from your labor. How Wonderful!!
I wish there was a way to can all these watermelons that are in the field now, cause as soon as we sell them all, we will want them back!! Nothin like an ice cold melon when it's 100 degrees outside. We've got plenty if ya need more.

Samantha and I made strawberry jam awhile ago - but I regret to say that it used sugar. I don't suppose you could send me the recipe with the honey variation?
We have made pickles before but we were never able to get them to come out right, so last year I asked a friend of mine, that makes the best pickles that I have ever had to teach me how and she had me over for a pickle making. I found out that my cucumbers were to big so now I know that if I have any cucumbers this year I need to pick them while they are small! :)

Yes,we have many a batch of jam with sugar. The recipes use huge amounts, don't they? :) We just bought pectin that had the option of using apple or white grape juice instead of sugar. We then subtituted honey until it was sweet enough. :)It is not a firm as store-bought jam, and is easier to spread as well. (A result of the honey) But it sets very well. Everyone loves it.:)

Yes, small pickles are much better! We have a couple jars of large ones, and they are rather mushy.:) Also, if you only hot-water-bath them for 5 minutes rather then the typical 10, then they are crispier. :)
